
As African Descent Ontario (ADSON) celebrates Black History Month 2025, we embrace one of the most powerful themes ever: “Innovation, Resilience, and Black Excellence.” This theme resonates deeply with the remarkable contributions of Black innovators whose creations have shaped the world. Among them stands George Crum, the African-American chef credited with inventing the potato chip, a snack beloved across cultures and continents.
The Accidental Invention of the Potato Chip
In 1853, George Crum (born George Speck) was working as a chef at Moon’s Lake House, a popular restaurant in Saratoga Springs, New York. One day, a dissatisfied customer repeatedly sent back his plate of fried potatoes, complaining they were too thick and soggy. Frustrated, Crum decided to slice the potatoes extremely thin, fry them until crispy, and season them generously with salt. To his surprise, the customer loved the new dish, and soon, “Saratoga Chips” became a signature item on the restaurant’s menu.
Although Crum never patented his creation, the potato chip industry eventually grew into a multi-billion-dollar business, with brands like Lay’s, Pringles, and Ruffles tracing their roots back to his culinary ingenuity.
